Livno is a town that knows how to surprise. Known for Livno cheese, which travels all over the world, for Lake Buško, for the wild horses of Mount Cincar that have become a symbol of the area, and for the fortress that has watched over the town for centuries, Livno has long been more than a stop on the way to the sea. But since 2024 the town has one more reason to stop, or even to plan a special trip. Carnis Bloody Good restaurant at Gabrijela Jurkića 13 is not just a good place to eat: it proves that in a small Bosnian town you can eat one of the better burgers in the region.
The story behind Carnis
Every good restaurant starts with a story, and Carnis has its own, honest and unembellished. After years in Germany and in top steakhouse kitchens such as Marble in Zagreb, chef Tomislav Trboglav decided to bring his knowledge and passion for meat home, to Livno. It was not an easy decision: bringing the fine-dining philosophy of dry ageing, smash burgers and low-and-slow BBQ to a town that had nothing like it takes courage and vision. The result speaks for itself.

An interior that sets the mood
As soon as you walk into Carnis, it is clear this is not a typical restaurant. The space has a modern American feel: dark surfaces, industrial details, clever lighting and walls full of details that make you smile. Every corner has a joke, every detail is thought through with humour and style. It is not an attempt to copy something foreign but an original take on Americana with local character. The atmosphere is relaxed, loud in the right way, and puts you straight into the mood in which a burger tastes even better.

Burgers worth travelling for
Now for the food, and here Carnis does not disappoint. The menu is carefully built around ten burgers that cover the whole range from classic to provocative. A brioche bun that holds up under pressure, a patty of top-quality beef with a perfect crust and a juicy centre, and combinations of ingredients that are anything but random: all the result of a kitchen that treats a burger as a serious bite, not fast food.
The Carnis Burger with Parmigiano Reggiano and pesto Genovese, the Truffle Burger with truffle mayonnaise and the Smash versions with thin, crispy patties are in a class of their own. The smash burger, a technique where the meat is pressed onto a hot plate so it caramelises outside while staying juicy inside, is rare in this part of Bosnia and Herzegovina, and Carnis does it right.

Smookey: smoke, patience and a new level of flavour
Alongside the burgers, Carnis has another strand that should not go unnoticed: the Smookey menu. Meat cooked for hours at a low temperature with the aroma of wood and spices is a philosophy that demands patience and know-how. Short ribs for two at 47 KM, veal shank at 75 KM and the Carnis platter for two at 73 KM are dishes you order on purpose, with good wine and no hurry. Pork ribs with BBQ sauce and coleslaw are the perfect introduction for anyone discovering Smookey.
Chef Experience, the restaurant that comes to you
One service that makes Carnis unique, also for visitors to the region, is the Chef Experience: chef Tomislav Trboglav comes to your location and cooks a private dinner or event. For groups, special occasions or anyone who wants a Livno food experience in their own space, it is a service you rarely find.
Taste & Rate editors’ tip
Order the Truffle Burger and the Devils Smash on the same visit: one is elegance, the other adrenaline, and together they show the range Carnis covers. If you are coming in the evening, book ahead, because the restaurant fills up much faster then. Carnis is open every day from 09:00 to 23:00, and breakfast until 12:00 on weekdays makes it a morning address too.
