Dabić Winery — Trebinje, Republika Srpska

The family-run Dabić winery

Trebinje is a town that knows how to live slowly and well, and that pace gives the wine made here its particular character. Dabić Winery, in Bihovo on the road towards Volujac, is part of a Trebinje wine tradition that has been built quietly over the years, with clear results in the bottle. Surrounded by fertile Herzegovinian soil that has proved over centuries it can grow outstanding Žilavka and Vranac, this winery offers something large industrial producers cannot: a real sense of place, hands that know every vine, and a story that comes with every pour.

What Dabić Winery offers wine lovers

At its heart are the native grape varieties that put Herzegovina on Europe’s wine maps: Žilavka and Vranac. Žilavka is a white wine that in good years develops aromas of apricot, peach and Mediterranean herbs, with a lively acidity that stays fresh to the last sip. Vranac is a dark, powerful red with deep notes of plum and spice. Together they are two faces of the same Herzegovinian story. Dabić also makes rakija, which puts it among the few producers that keep the whole cellar tradition under one roof. Visitors can enjoy tastings, a tour of the vineyard and cellar, and an introduction to winemaking from harvest to bottle.

Who is Dabić Winery for?

For anyone who wants to see Trebinje not only as a town of beautiful architecture and plane trees but as a living wine destination with a soul. Trebinje has long been on the Herzegovina Wine Road, and Dabić is one of the addresses that make the road worth travelling. For visitors coming from Dubrovnik it is a natural stop on the way, easy to reach from the M14.2 road. A tour with tasting suits small groups, team-building visits and anyone who wants to understand why Herzegovinian wine is being heard more and more on the European market.

Taste & Rate editors’ tip

Call the winery in advance on +387 65 390 190 to arrange a tasting: places like this give their best when they know serious guests are coming. Order the Žilavka chilled to 10 degrees and give it a minute in the glass; that is when it starts to talk. And if you like rakija, do not leave without trying the grape brandy.
